1. The project in a nutshell
“Fondre à feu doux” offers cooking workshops during which facilitators share recipes from their countries of origin
2. The Project’s Objective
The goal is to highlight and promote the culinary skills of people from different cultures, while offering participants a culinary journey. Additionally, for our lead cooks who facilitate the sessions, this activity serves as a stepping stone toward entering the professional restaurant industry.
3. The Project in Detail
Learn how to cook Afghan, Syrian, Ethiopian, and other recipes while discovering the cultural practices of the instructors and tasting the dishes! Our facilitators are professionals early in their careers. They have recently obtained their Federal Certificate of Vocational Training as kitchen staff or are just starting out in the catering business. Our world cuisine workshops are either vegetarian or non-vegetarian. Some are open to adults, while others are parent-child workshops. They all conclude with a tasting of the menu prepared together during a friendly meal. These workshops take place one Saturday per month at the Petit Refuge de Sauvabelin, nestled in the lush greenery of the forest. Thanks to support from Lausanne’s Participatory Budget, Fondre à feu doux will offer these cooking workshops free of charge, ensure the hiring of paid instructors, and invest in the kitchen equipment needed to launch the program. www.fondre-a-feu-doux.ch

Communication costs (website, flyers, posters): 1,050 CHF
Rent for the Petit Refuge de Sauvabelin, speaker fees, raw materials, and equipment: 14,200 CHF
Transportation costs, per diem: 400 CHF
Training, hygiene classes, graphic design costs, project management consulting: 2,315 CHF
Insurance, “Lausanne à Table” membership: 635 CHF
